Recipes for persons suffering from type 2 -diabetes

Yes, we can prepare and eat good food and suffer somewhat from type 2-diabetes (this is my personal case). I react by avoiding certain products and ingredients but I always try to enjoy my meals as much as possible and for that I adapt and create some recipes.
Some year ago, I received a book from a doctor ; the title was "Are diabetes and gastronomy compatible ?"
The answer is clearly "Yes" and I will, here, try to prove it to you through a few menus.
Even your (lucky) guests not suffering from diabetes will enjoy them
Menu 1
Starter : String bean salad, chicken, mashed black olives and fresh onion rings
Main Course : Roasted brill or halibut steak, sweet garlic chips and fresh spinach
Dessert :Light redberry cake
Menu 2
Starter : Green lentil, soya beansprouts and spider (or edible) crab salad with balsamic vinegar
Main Course : Thick farm pork rib with mashed red onions, small potatoes flavoured with fresh thyme
Dessert : Fruit kebabs roasted on a plancha (or on a BBQ)
Menu 3
Starter : Chilled cucumber cream soup with young fresh onions
Main Course : Panfried salmon escalopes with green lentils and smoked duckbreast
Dessert : Redberries Syllabub with fresh mint and pink pepper
