Recipe for the anchovy paste (anchoiade)for 6 :

  1. 600 g fillets of anchovy in olive oil
  2. 3 cloves of garlic, cored and finely chopped
  3. 15cl olive oil
  4. Freshly ground pepper
  5. 1cl vinegar or lemon juice

Progression

Traditionally the anchoiade is made with a mortar, here I offer you a much simpler adaptation, for the one who wouldn't happen to have one.
Place the anchovies in a salad bowl, add the garlic then blitz for a minute or so. Now, using a wooden spoon or a small whisk, blend in the olive oil like you would do for a mayonnaise; at the end add in the vinegar or the lemon juice.
Spread some of it on a thick slice of French bread and grill it for 5 minutes. As a snack yummi!..
