Ingredients for 4 servings
- olive oil
- juice of 3 squeezed lemons
- thyme, bay leaf, clove, coriander seeds and fresh
- pepper mill
- 2 tablespoons tomato paste
- 1 sliced onion
- 1/2 white wine
- 400 g crosnes
- salt
brown the onion in olive oil
add lemon and white wine, add the spices, tomato paste, salt
let simmer 4-5 minutes
then plunge the crosnes, let cook 10 minutes
consume fresh with fresh coriander chopped just before serving
