1/ Cook the rice in the milk with two tablespoons of sugar, the vanilla sugar and a pinch of salt (approximately 22 minutes) being very careful that it doesn't stick.
2/ When it is cooked and has absorbed all the milk, remove from heat, spread on a baking sheet and let it cool.
3/ Then mix in the flour, egg, cinnamon, grated lemon zest or combava. and form small balls then flatten them.
4/ Heat your oil then dip your little pancakes in it.
Then place them on absorbent paper and let them cool a little.
And before serving, roll them in caster sugar.
